World food day: By changing our consumption habits we can contribute to reduce environmental impact.

Around the world, it is estimated that 1.3 billion tons of fruits, vegetables, meat, seafood, dairy and grains are wasted during their distribution or thrown away because in many occasions, we buy more than we consume. This happens not only in our homes, but also in hotels, supermarkets, restaurants and schools. By incorporating small changes to our cooking routine, we can reduce the impacts generated by food waste in the ecosystem and contribute to the environmental wellness. During the world food day, we share some delicious sustainable recipes that are easy to prepare at home, thanks to the collaboration of the chef Palmiro Ocampo, WWF Peru ambassador and main promoter of the optimal cuisine, a culinary proposal that takes full advantage of all the ingredients and their nutritional value

Around the world, it is estimated that 1.3 billion tons of fruits, vegetables, meat, seafood, dairy and grains are wasted during their distribution or thrown away because in many occasions, we buy more than we consume. This happens not only in our homes, but also in hotels, supermarkets, restaurants and schools.
 
By wasting this amount of food, we are losing the opportunity to feed all the people who suffer from hunger around the world and we are also wasting all the resources used to produce them (water, land used for agriculture, transportation, among others). For this reason, food waste is a humanitarian and an environmental concern, considering the global need for food and the enormous ecological footprint generated by producing it.
 
While the population continues to grow, our goal is not to produce more, but to feed more people while wasting less food. Reducing food waste is possible if we all change our habits at home and transform those actions into more responsible consumption habits.
 
By incorporating small changes to our cooking routine, we can reduce the impacts generated by food waste in the ecosystem and contribute to the environmental wellness. During the world food day, we share some delicious sustainable recipes that are easy to prepare at home, thanks to the collaboration of the chef Palmiro Ocampo, WWF Peru ambassador and main promoter of the optimal cuisine, a culinary proposal that takes full advantage of all the ingredients and their nutritional value:
 
  1. Potato peel powder nugget
 
  1. We only need yellow potatoes, one of the blessings of Peru’s land.
  2. Boil and remove the peel.
  3. Take the peel to the oven to dehydrate them (30-40 min).
  4. Once they are completely dry, take them to the blender.
  5. Blend them and wait until they become small flakes.
  6. Put them in a bowl or a plate.
  7. Prepare 2 beaten eggs with salt and pepper. Cut some chicken pieces.
  8. We do the conventional process. Mix the chicken with the egg and then pass it through the peel powder.
  9. Fry them with hot vegetable oil for 8 minutes at medium temperature.
  10. We serve and enjoy.
 
  1. Sustainable Salad
 
  1. Season fruits. You can take the ones you like.
  2. Cut them into pieces. In this case we have done it in small squares.
  3. At the same time, remove the brown and white part of the banana peel. We cut into strips and keep them in water for a while.
  4. Add 3/4 cup of water to a pot and 4 spoons of sugar (medium heat). Once the boil breaks, place the strips. We lower the fire.
  5. Keep simmering approx. 15 to 20 min. Remove softly and leave.
  6. Remove the strips, wait until they cool down, combine them with cinnamon and preserve them.
  7.  We serve and decorate with the strips of cinnamon.
